The Chocolate I Ate This Week: Dolfin

Chocolate round-up for the past few days:

Tuesday
Dolfin is a Belgian company that's been around since . They specialize in blending pure chocolates with interesting and/or unusual ingredients. I'm pretty sure that they've changed their recipe over the past year; it seems like they increased the proportions of the added ingredients. The flavors are a lot more intense than they used to be.

Dolfin Noir Gingembre: 52% dark chocolate with fresh ginger.
Dolfin Lait Nougatine: milk chocolate with glazed hazelnuts.

Hot Fudge (on top of a sundae from Brighams Ice Cream)

Homemade brownie

Cote d'Or Brut 86%: Sometime soon I'm going to do a round-up of chocolates that contain a cacao content of 80% or higher. The Cote d'Or Brut 86% (also Belgian) is very intense, a little smoky with an interesting twist of lemon citrus at the very end. I will revisit this bar soon with more indepth tasting notes.
