What foods and beverages make good palette cleansers?

Possible palette cleansers include crackers, brioche, angel food cake, madeleines, and sorbet. We suggest pairing your tasting with a few different palette cleansers to find which ones best suit your tastebuds. For beverages, we always suggest having some room temperature water close at hand. Big, full-bodied red wines, late harvest wines such as Rieslings, tawny port, dark beers, cognac, and various dessert wines will make interesting pairings as well.

How should I store my chocolate tasting kit?

Store your chocolate tasting kit in a cool, dry place. Do not keep your kit in the refrigerator, as the varying temperatures will cause condensation and bloom.
